What The New Tofu Ranking Means For Your Next Noodle Bowl

October 19, 2026Otto Park ilwoo

Some evenings, all you want is a bowl of noodles with a sauce you love. A little heat, crisp cucumber, something savoury on top. That familiar starting point can also be an opportunity to think about what makes a meal work for you.

The recent conversation around tofu and protein gives us a useful reason to revisit that bowl. At JOY K, our suggestion is simple: choose your noodle base for the dish you want to eat, then build the rest of the meal deliberately. Here is how to bring that idea into your kitchen with noodles from our collection.

The research, in context

Why tofu is getting attention

A 2026 Perspective paper introduced the BPI Score, comparing 20 protein foods across environmental, nutritional and accessibility measures. Tofu ranked first at 36 out of 40. This initial model used UK retail data and comparisons per 100 g of protein. It was not a clinical trial, and it did not test JOY K products.[1]

Choose your noodles and your protein separately

A packet of tofu noodles is a different food from a block of tofu. Its name alone does not tell you how much protein your meal will contain. Check the nutrition label for the exact product and serving size, and choose a distinct protein topping such as firm tofu, eggs, chicken or edamame.

For the noodle base, follow the flavour you feel like eating. Haechomiin Tofu Noodles are one starting point for a bibim-style bowl. Black Bean Noodles offer another direction for a sesame and soy salad. Kelp Noodles and Seaweed Noodles give you more options for cold bowls with crunchy vegetables. All four are available through JOY K.[3]

Build the whole meal

Make room for the whole meal

Singapore’s My Healthy Plate guide suggests a quarter plate of wholegrains, a quarter of protein foods, and half of fruit and vegetables.[2] Use that as a prompt to look beyond the noodles: what else belongs in this meal?

Low-calorie noodle alternatives do not automatically replace the nutrition of wholegrains. If your meal needs a wholegrain portion, consider a side of brown rice. Add vegetables generously, choose your protein topping and adjust quantities to your appetite. Start with a little sauce, toss well, then taste before adding more. A squeeze of lime or a sprinkle of sesame can change the finish without needing a second full sachet.
